Macaroni and Cheese Recipe
This is my mom's recipe for macaroni and cheese. I grew up on it and have often requested it on my return visits home. It is surprisingly uncomplicated and very delicious. I hope you enjoy it as much as I do.

The Greedy Ents
- 1½lbs. Tillamook Sharp Cheddar
- 1 16oz. box rigatoni
- 1 12oz. can evaporated milk
- 2 tsp. corn starch
- 2 Tbsp. garlic salt
- table salt and ground black pepper *(to taste)
The Prep Work
- Start a pot of water boiling the noodles with a little salt in the water.
- Preheat oven to 350°.
- Grate 1 pound of cheese, and place in a large casserole dish.
- Sprinkle corn starch over shredded cheese and toss to coat.
- Microwave cheese for 2½ minutes and remove.
- Add evaporated milk to cheese and return to microwave for another 3½ minutes.
- Remove and stir until cheese sauce is smooth and consistant.
- Add noodles and garlic salt to the casserole dish, and stir until evenly coated.
- Grate last ½ pound of cheese and spread it over the top evenly.
- At this point I usually spread like some parsley flakes and paprika lightly over the top of the shredded cheese for color and presentation.
- Bake for about 25 minutes or until the cheese is fully melted, and it is bubbling in a few spots.
- Remove and let stand for 10 minutes or so before serving.
