Macaroni and Cheese Recipe

This is my mom's recipe for macaroni and cheese. I grew up on it and have often requested it on my return visits home. It is surprisingly uncomplicated and very delicious. I hope you enjoy it as much as I do.

The Prep Work

  1. Start a pot of water boiling the noodles with a little salt in the water.
  2. Preheat oven to 350°.
  3. Grate 1 pound of cheese, and place in a large casserole dish.
  4. Sprinkle corn starch over shredded cheese and toss to coat.
  5. Microwave cheese for 2½ minutes and remove.
  6. Add evaporated milk to cheese and return to microwave for another 3½ minutes.
  7. Remove and stir until cheese sauce is smooth and consistant.
  8. Add noodles and garlic salt to the casserole dish, and stir until evenly coated.
  9. Grate last ½ pound of cheese and spread it over the top evenly.
  10. At this point I usually spread like some parsley flakes and paprika lightly over the top of the shredded cheese for color and presentation.
  11. Bake for about 25 minutes or until the cheese is fully melted, and it is bubbling in a few spots.
  12. Remove and let stand for 10 minutes or so before serving.
